Tomato Soup

Image
Tomato soup is very easy to prepare at home. My husband's  favorite  and healthy soup. I personal never used to like tomato soup but once I prepared it at home as we both had sore throat and a cup of it made us feel much  relieved.  Therefore, very best soup to be consumed during cold and sore throat as this soup has lots of pepper in it. My mother started making this at home with bread crumbs and I got the recipe from her. My husband likes it with garlic bread. It is a very easy, tasty and healthy soup. Tastier than those of restaurants and takes hardly 15 minutes. Do try it and let me know :) NOTE :  Can use 1 tbsp black pepper powder instead of pepper balls.  Can add any other vegetables along with tomato, potatoes and onions like carrots. Preparation Time : 5 Minutes Cooking Time : 10 Minutes Total Taken : 15 Minutes Yield : 3-4 servings Tomato Soup Ingredients: To be grinded  : Tomatoes 2 nos Onio...

Kokum Kadhi / Sol Kadhi / Kokum Curry

Image
Kokam is a dark red colored fruit. Kokum Kadhi / Curry is a Goan / Konkan drink. It is good for digestion and acts as a cooler. Can have it lukewarm or chilled as a drink or along with plain rice. This is a curry prepared with no boiling process involved. Kokum Kadhi is very tangy and easy to make. Some people temper this curry with red chilly, mustard seeds.cumin seeds and curry leaves. This is made out of coconut milk and garlic cloves. Thus, this curry is little sour and spicy and can consumed as an appetizing drink. It gives a soothing effect by having it on hot summer. NOTE :  Number of chilies depend on how spicy they are. I am using 5 as mine are not very spicy. Can serve the kokum kadhi immediately or can keep it in a fridge and then serve cold. Remember, leftover kokum kadhi  should be refigerated as coconut milk can get spoiled in the hot weather. Can add a pinch of asafoetida also. Preparation Time : 30 Minutes Cooking Time : 5 Minutes...

Aamras / Creamy Pureed Mangoes

Aamras is the extracted pulp of our King of the fruit, Mango. Aamras is most popular in Gujarat, Maharashtra and Rajasthan. There are different flavors in aamras. The specialty of this dish is that it can be prepared by any variety of mango and is well known for its color, taste and simplicity. It goes well with puri and chapathi. Everybody loves it in my house and i guess the same in your house too. NOTE :   Can use any type of mango. Can add saffron and cardamom powder / elaichi while grinding to give its flavor. Milk and ghee are added to the pulp to enhance its flavor. I am adding only milk because it reduces body heat as mango increases the body heat. Sugar is also added to adjust the sweetness. But i am not using sugar as my mangoes are sweet. cardamom powder (optional) Put little pulp at a time while grinding else it may pour out. Don't use too much of milk. If you feel it is very thick then add some water to it. Time Taken : 5-7 Minutes Yield : 3...
