Vegetable Pulao

Well, this is the best dish for the bachelor's and freshers to start with. I had previously posted a recipe for white vegetable pulao but this is bit different from it in terms of color as well as taste. This is my mother's recipe. It takes less time and also fills your stomach. I will be using green chutney, which can be prepared and stored in fridge for a week or two and can be used for other dishes also. NOTE :   Can add any vegetables of your choice or can try with chicken, mutton or egg also . Need not have to use exactly the same vegetables what I have used. Number of green chilies depend on how spicy they are. I am using 6 as mine are not very  spicy. You can cut the vegetables to the shape you want. Optional - Can use coriander leaves at the end to garnish. I am non adding exactly 2 glass water for 1 glass rice grains so as to prevent it from getting overcooked. Cutlet

Cutlets are very easy to prepare at home. Can have it in the evening as snack along with a hot cup of tea or a coffee. You can also add any vegetables you like to add extra nutrition and to make it more healthy ;). I love cutlets especially when they are hot so do try it this way. NOTE :  Can use finely chopped boiled vegetables like beetroot, carrot, beans etc I am using potatoes,Onions and peas. You can also use rice flour instead of rice. Adding bread helps in crispiness.  Green chilies or red chilly powder can be added as per your preference. I am not using garlic and ginger so as to make it simple but you can also try along with it. Use breads by removing it's crusts or sides. Can use corn flour solution(1 tbsp corn flour dissolved with 1-2 tbsp water) to dip cutlets before rolling it over rava. Schezwan Fried Rice is a Indo-Chinese recipe. Spicy, hot and filled with flavors. Fried rice is a very simple and easy recipe made from steamed rice stir-fried in a wok, often with other ingredients like vegetables, egg and meat. Schezwan fried rice involves a process of making schezwan sauce and adding the steam rice into it. This is almost everybody's favorite dish and so is mine. Love to have it during rainy season. NOTE :   Can skip any vegetables mentioned below in ingredients table Can add boiled chicken, mutton or egg along with other vegetables. Hyderabadi Chicken / Mutton Dum Biryani

Hyderabadi Biryani is a very famous Hyderabadi Dish. Gives nice flavor of chicken / mutton. Cooking biryani on dum involves marinated raw chicken and partially cooked rice to be layered and to be cooked on low flame covered with the lid. On opening the lid, the entire house smells fragrant, rich with the reassuring aroma of pure ghee. The chicken / mutton is so well cooked that it simply melts away in the mouth. Though, it is a lengthy process but the taste is worth of going through the elaborated process. I watched many youtube videos and read many sites with this recipe. Finally, i was ready with the recipe by combining the ingredients from all the videos and sites that i felt was suitable.  And i gave it a first try on my husband's birthday and it turned out to be the best gift.  This recipe can be divided into 3 phases i.e., Gravy Preparation, Rice Preparation and Seasoning. Malabar Chicken/ Mutton Dum Biryani

This is a very famous Kerala Dish. I was not a very big fan of dum biryani. One day, m y husband took me to one of the best restaurant in Singapore called swadisht. We ordered malabar mutton biryani and it was so tasty that we forgot the entire world. Even after getting back home i was still thinking about this dish and had a question in my mind if i can also prepare it. I watched many youtube videos and read many sites with this recipe. Finally, i was ready with the recipe by combining the ingredients from all the videos and sites that i felt was suitable.  My Father loves this a lot. And i gave it a first try when he had come to my house to Singapore for the very first time after my marriage. On their day of arrival we had taken them to that same restaurant and they too loved it. Spicy Pongal / Khichdi

Pongal can be spicy or sweet. I prefer spicy one more. My way of preparing pongal is different. I use toor dal some times instead of moong dal. I some times call pongal as khichdi as there is no much difference in taste nor ingredients. Pongal is a very famous dish in Tamilnadu and Khichdi in Gujarat. This dish is very simple and easy. Can have it for breakfast or lunch. This recipe can be modified as per your requirement. NOTE :   Number of green chilies depend on how spicy they are. I am using 3 as mine are not very  spicy. You can either make this dish with toor dal or moong dal or both together. Can use garlic ginger paste if needed. Can make use of any vegetables in this dish or can have it plain without any vegetables. Can make use of onions only if needed. Can make use of oil or ghee or even both. Mango Rice (Mavinakayi Chitranna)

This is a very famous and traditional dish of Karnataka and Andhra. Similar to normal chitranna , where lemon is replaced by raw mango. This dish is usually made out of leftover rice thus very simple and easy. People in Karnataka have it atleast once a week. Best for lunch and breakfast. My mother used to pack my lunch box with chitranna. This dish tasted best when the mango is tangy NOTE :   Number of green chilies depend on how spicy they are. I am using 5 as mine are not very  spicy. If you don't have any raw mango then use 2 tbsp lime water instead ( Lemon juice). Optional - Can use coriander leaves and grated coconut at the end to garnish. Can use groundnuts / Peanuts for seasoning if needed. Ensure to cool the rice before mixing the rice with tempering.
