Pepper Chicken / Chicken Stir Fry / Chicken Kali Mirch

This recipe is my favorite. Simple, healthy and very tasty. Clears the throat completely thus very good for cold and sore throat. This is the simplest chicken item with least number of ingredients. NOTE :          Optional :  Can use capsicum and onions if needed. Can use finely chopped coriander leaves to garnish. Can use 1 tbsp Vinegar also. This recipe is my favorite. Simple, healthy and very tasty. Clears the throat completely thus very good for cold and sore throat. NOTE : Can use any vegetables like carrot, cabbage, beans, mushroom etc if needed. Adding egg is optional. Can add finely chopped green chilies but I am using pepper powder instead as it is very good for throat and cold. Andhra Chilli Chicken is my most favorite dish. This dish  is a authentic Andhra Pradesh dish. This dish is hot, attractive and very spicy. This dish is the spiciest, oiliest and aromatic. You can find this dish is almost all the Andhra restaurants in various states. We used to order this along with biryani and both goes very well together. This is not a dry item and has lots of spicy gravy with this. You can see lots of green chilli seeds in this gravy. Thus, very spicy and goes well with  dosa, plain rice, Appams, parathas, roti, naan (Indian breads), ghee rice and biryani. NOTE :  Number of chilies depend on how spicy they are. I am using 7 as mine are not very spicy. Chicken can be boneless or with bone. Can use ghee or butter instead of oil if you prefer. Optional - Can garnish with Fried Capsicum or Coriander Leaves. Schezwan Fried Rice is a Indo-Chinese recipe. Spicy, hot and filled with flavors. Fried rice is a very simple and easy recipe made from steamed rice stir-fried in a wok, often with other ingredients like vegetables, egg and meat. Schezwan fried rice involves a process of making schezwan sauce and adding the steam rice into it. This is almost everybody's favorite dish and so is mine. Love to have it during rainy season. NOTE :   Can skip any vegetables mentioned below in ingredients table Can add boiled chicken, mutton or egg along with other vegetables. Need not have to use exactly the same vegetables what I have used. Number of green chilies depend on how spicy they are. I am using 3. We are not using any hot spices. You can cut the vegetables to the shape you want. Optional - Can use coriander leaves and spring onions at the end to garnish. I am non adding exactly 2 glass water for 1 glass rice grains so as to prevent it from getting overcooked....

Egg Masala

Egg Masala recipe vary from people to people based on regions. I love eggs and they are good for health. This recipe goes well with plain rice, chapathi, naan, roti, parathas (Indian breads) NOTE : Number of chilies depend on how spicy they are. I am not using coconut while grinding. You can add it if you want to make your gravy thick. Cutting the egg half instead of full will make the gravy to panetrate inside the egg and gives you that taste. Chicken Chettinad is a authentic Tamilnadu dish. This dish is hot and pungent with fresh ground masala's. Chettinad is famous for it's use of a variety of spices. This dish is the spiciest, oiliest and aromatic with chicken cooked with different ingredients like fennel seeds, coriander seeds, poppy and cumin seeds that gives a mind blowing aroma to the curry. Hyderabadi Chicken / Mutton Dum Biryani

Hyderabadi Biryani is a very famous Hyderabadi Dish. Gives nice flavor of chicken / mutton. Cooking biryani on dum involves marinated raw chicken and partially cooked rice to be layered and to be cooked on low flame covered with the lid. On opening the lid, the entire house smells fragrant, rich with the reassuring aroma of pure ghee. The chicken / mutton is so well cooked that it simply melts away in the mouth. Though, it is a lengthy process but the taste is worth of going through the elaborated process. I watched many youtube videos and read many sites with this recipe. Finally, i was ready with the recipe by combining the ingredients from all the videos and sites that i felt was suitable.  And i gave it a first try on my husband's birthday and it turned out to be the best gift.  This recipe can be divided into 3 phases i.e., Gravy Preparation, Rice Preparation and Seasoning. Mutton Keema Samosa

Well, this is my family's favorite dish. This was a special dish that was prepared by my mother usually on Sunday's for breakfast. We used to wait for this day. I really miss those days :( This is made with Minced Mutton which is also called Keema. You can try it with other minced meat as well. NOTE :   Can use minced chicken or any other vegetable instead minced mutton. Can add green chilies as per your taste. Until you deep fry the samosas, keep it covered to avoid drying. You can freeze the samosas or keep in the fridge if you are using them later. Instead of making the cones using dough one can also use readymade samosa strips / samosa patti. Dampen slightly and place a portion of stuffing and fold into a triangle shape. Can add corn flour to make the gravy thick and to prevent it from having any water content.
